I need a new stock if I am going to get a heavy barrel for my 300 win mag.

I don't have the fully adjustable model, but I do have two very similar to that and they're great. I didn't need the fully adjustable model but I did strongly consider it. For the price I don't think you'll fin much better, but you could also look at the HS Precision stocks. The B&C do add a lot of weight, but since I don't use it for hunting on the move I consider the weight a benefit in less felt recoil and ease of holding it steadier.

I was looking at the A2 stock but wondering how much of a hassel it would be to open the barrel channel up to accomodate my barrel

I'm running that B&C stock on my Savage 10FP, and I like it! The first thing I noticed over the Choate stock it replaced was the reduction in recoil. I bet it reduced it by at least 30%, no more black and blue shoulder after 50rds fired, and the Choate has a very soft pad on it.
