How would you know how many points a buck has? Any link out there?

If your talking about someone saying they shot a 10 point buck, it means his antlers have 10 tines/point on them.
If your talking about boon and crocket points or one of the other scoring systems for trophy animals, I don't remember the specifics but there is alot of stuff taken into consideration.

How long does a point have to be to be a point? An inch? A half inch? Three inches?

1 inch for b&c.
some people count a point as a point if you can hang a ring on it.
also, the way points are counted varies by region. if you told me that you shot a 10-point buck, i would think you shot a 10x10 (10 on the left, 10 on the right) buck. likewise, if i told somebody else i shot a 5-pointer, they would think 5 points total (3 on the left, 2 on the right).

dakotasin is referring to the difference between "Western Count" and "Eastern Count". Eastern count refers to the total number of points. Western count assumes uniformity; it's sometimes used as "4x4", as well as four points on one--or each--side.
I haven't kept track of "hang a ring on it" as a test of a true point on an antler. Texas used to have that definition. Lots of game wardens have gotten a chuckle at hunters' pocket-knife efforts, in areas where a minimum of three points (total) was required for legality.
