Here is a meal of venison from my late muzzleloader hunt. The meat is the tip of the back chops flattened and dipped in bread crumbs and then pan fried in olive oil. It is served with pasta and sauce.
The dark beer is one of my oatmeal stout home brews. A good chiante wine also goes well with this meal.

Classico sauces started out good but in a year or two deteriorated .You'd do better to make your own sauces. Breadcrumbs too, make your own. I just finished dinner , here's what I made . I made my own pasta with whole wheat flour. The sauce was dried tomato, onion ,parsley ,salt and pepper. This with venison chops flavored with a little brandy. Had a bottle of Spaten Optimator with it . It's amazing that after a dinner like that you forget all about sitting in the cold for hours waiting for a deer !

Looks wonderful! Mrs. Meek has a similar recipe. The big difference is she soaks the meat in marsala wine for 6 hours before cooking.

Two summers ago, I made a wonderful sauce from the over-abundance of Roma tomatoes from our garden. Wife instructed me last year not to plant nine tomato bushes!!!!! I went a little nuts with the Miracle Grow that year too.
Also, this summer, a hail storm whacked my three large plants hard. I'll try again this summer.
Making own pasta sounds like a good idea. I'd like to try a spinach variety.

About those 9 tomato plants...well if 3 ain't enough plant 9 the next year - right...oh yeah, BTDT :p
Had plenty of 'maters , ever had 3 cast irons skillets going at once doing fried green tomatos...only one burner left for the venison? I have :D

Looks great! I've been snacking on Venison/Cheddar/Chipotle summer sausage all week. Give me another month and I'm sure I'll be burned out on it. :D

I just noshed on a shredded venison, black bean and white cheddar cheese burrito with my homemade hot suace. YUM Also just put in an component order for a major home sausage making operation, summer sausage, slim jims, brats and smoked kielbasa. Gonna be some good eats this year.

I'm glad there are cooks here. I see venison as a special treat and something to truely appreciate. Too many people are turned off by poorly prepared or slopily butchered venison.
When done correctly, the results are wunderbar!
If you have any recipes and photos of completed masterpiece, please post.
Tis the time of year to appreciate the fall or winter harvest of a deer.

Venison for lunch again today. I'm seeing a trend developing. Sloppy Joes today. My wife makes it and it's so simple. Brown 1 pound of your favorite ground up critter with a half cup of chopped onion, 1/2 cup chopped celery, 1 large clove garlic, chopped and 1/2 cup of chopped peppers (I like a jalepeno or 2 in there as well). When that's all browned and the veggies are cooked, add enough ketchup to make it a little runnier than it should be and simmer it until it reaches the desired consistency. Serve on buns with a slice of raw onion, or not. Best consumed with a home brewed dark ale (not at work though).
