Do you have to remove the magazine from an AK-47 type rifle to fold the stock on the underfolding models?

No. Unlike the MP-38 or MP-40 folding stock, the AK folder is actually "u" shape so it folds without having to remove the magazine.

Got one, done that with a 30 round magazine, 'nough said.:D
