Ok some guns offer loads of parts kits, aftermarket parts and accessories like the AK-47, AR-15, 1911, Mossberg500/Remington870 but besides that are there any other firearms allowing for ground up builds and endless aftermarket customization? I'm just a hands on guy that likes to tinker, lol, thanks for any info.

Ruger 10/22 there are seemingly endless parts available to turn one into just about any configuration you could ever want.
Ammo is cheap as well.

perhaps the savage 11/110/stevens rifles...with easily changeable barrels, one could have a super lightweight trail ready mountain rifle and then swap it over and have a heavy barrel bench rest gun

you could probably also build a "Glock" with out actually using a single Glock factory part

If you don't mind butchering a little history  a Mosin Nagant can be a fun project. Bent bolts, scope mounts, modern stocks, and it's cheap to get the base model to work from.

+1 on the Savage 110 series. I picked a beater up for $250 and was just going to glass bed it, but now that I've looked at all the options available with stocks and barrels and mounts and bottom metal, all my work has come to a screeching halt while I re-decide which direction I'm going with the project. :D

If you can find a surplus Mauser or Springfield action, you could also do something a little more "classic", but it would be less modular and probably more expensive than a Savage or Rem action build. It really depends on the tools you have available and how much work you want to do yourself vs. paying a gunsmith.
