It's been a journey to say the least. Finally decided on a desantis style paddle holster (outside the waistband),3 slot belt type with a retension screw? On back order for 3-4 weeks. So many to chose from, either way, to much money or don't like,,( basically confused.) All of the major manufactures or supply houses are out of stock. Been going on now for a couple of weeks . Now my head is spinning!!!! Almost to many out there to chose from, and to many opionions!!! The bad thing is, if you hate it .your pretty much out of luck. Almost wish you could try em all on. ( FYI Kimber ultra carry 11)

Either a typo or terminology, but a paddle holster most likely wouldn't have three slots. You probably meant pancake.
Is it the "Speed Scabbard"?

Pancakes are good concealable holsters for Outside the Waistband (OWB) carry. You may be able to find a similar holster at Brownell's or Midway.
Also a custom holster like Simply Rugged's "Cuda" is similar, is pretty inexpensive and should ship within a few weeks.

Lobo Gun Leather also has a relatively inexpensive pancake that should ship pretty quickly.

What I found was that OWBs were a little bit more comfortable, but they greatly limited what kind of garments I could wear to conceal them. IWB lets me wear just about anything I want to.

Have you ever tried a ankle holster for any of your handguns? Some time I would like to buy a sp101 hammerless and do a ankle holster. I think that would be a very good thing to do????

I have a box full of holsters!
But like you I have settled on what are generally called high ride pancake style for owb carry. I like a secure holster meaning a strap over the pistol. I have carried for over 20 years and never pulled a weapon. So having it plenty secure is a requirement.
I have a mitch rosen that is the best iwb I ever owned.
You will end up with a few varities before you know it!

I agree with Coltdriver, that you will most likely end up with a bunch of holsters. Even if the one you have seems great, you'll still see another that looks like it may be better. It may be.
On the other hand, I don't care for thumb breaks as recommended by Coltdriver. Most well made holsters are so tight when new, they practically give you a weggie when trying to unholster your pistol. They eventually loosen up a bit, but that is plenty of retention for concealed carry, in my opinion. If I were open carrying, I probably would get some kind of active retention device on the holster. All of my holsters, but one ($35 from Cheaper than Dirt), can be held upside down and shaken and the pistol will not come out.
IWB is not as comfortable as OWB, in my opinion, but is much easier to conceal than most OWB holsters. However, you have such a short barreled pistol in the Kimber Ultra, that you may be able to get away with an OWB holster fairly easily since you won't need a very long cover garment.
Here are my two favorite sites for holster information. First is Horseshoe Leather for the basic OWB designs, such as pancake and wraparound. Second is the "Questions" section at High Noon Holsters. It's kind of hard to read just from that section, but if you click on any of the blue underlined words it will take you to information on that subject. It is very informative.

One holster I often recommend is the Raven Concealment Phantom. It is kydex and quickly marred up the beautiful blued slide on my Colt, but it is so versatile it has saved me from buying some holsters and has given me a better idea for what I like and what I don't. With one holster, and different attachments, you can wear it IWB or OWB, and you can change the ride height and cant. While I'm sure it is marketed to the "tactical experts", it really is a great holster for those new to carrying since it lets you try so many options with just one holster.

The Simply Rugged "Cuda" I recommended earlier, also is a versatile holster allowing you to wear it either IWB or OWB with just an extra set of straps.

IWB is something that you have to get used to...if you get a size larger pants..and a properly sized gunbelt...along with a good quality holster...it can be done comfortably...I also feel that I can draw faster with a good IWB holster than I can with a High ride pancake holster...because the gun is lower...it is way easier to conceal with an IWB holster than an OWB... I usually carry a HK2000 in a Milt Sparks VM2..I hear crossbreed holster are good also...
