I have been shooting sobots with a 50 cal. cap gun and they are very accurate at 50 yards...

What size HP pistol bullets are used in 50 cal sabots?

It depends on the exact size of the sabot.
Some .50 caliber sabots use .429 - .430 bullets, while others use .451 - .452 bullets.
.451 bullets are probably the most popular.

There's now .50 caliber sabots that also allow .40 caliber bullets and .458 bullets to be used.

Some are made to fit a .50 caliber bore tighter than others.

Can you describe the bullets/sabots, or the brand name that you've been using?
The bullets can be measured and weighed to help determine their size, and to help match them up.
