i decided to try a scope on my ak just to see what it would do at longer distances and went out yesterday to sight it in and started at 25 yards. I ran out of adjustment and it was still shooting about 6 to 8 inches low. Can someone please tell me how to fix this problem or if it can be fixed.

What scope?
How are you mounting it?
Sounds like its not mounted parallel to the bore.

Assuming your scope adjustments moved things in the correct direction, but just not far enough to zero, the scope is probably not defective, which leaves either the side mount or the side rail not being parallel to the bore.
I don't know of an easy way to figure out which one is the problem. If the rail is cockeyed on the receiver you are pretty much SOL unless the maker has a good warranty.

Sounds like the rear of the mount needs to be higher. If it is held by screws to the side of the receiver, the rearmost hole needs to be slotted in order to allow movement, pivoting slightly on the front screw. This of course might mean it could loosen with recoil.

Is the AK a Century build? It's entirely possible the siderail was riveted on slightly crooked.
