Uncle is selling his Ithaca SKB 700 skeet 12 Ga with fully adjustable stock. Anyone have an idea of a fair price he should be asking for it? Thanks.

Check CLOSED sales on Gun Broker
Also check what sellers are asking on GunsInternational.com - not an auction site

IMO
$400 if it's beat up. It would have to be non functional to be worth less than that.
$500 it would sell quickly.
I think at $600 it would sell. Maybe not immediately.
At $700 it would languish though if done nicely the adjustable stock might help.
$800, it would take a while to sell if at all.
I'd try for $700.
I think SKBs are fantastic shotguns for the money.

Was just updated that the receiver is stainless and highly engraved. it's also a “Trap” gun not skeet. full /IM chokes. Does that make any difference?
