So, I was going to drive to Columbus with the wife this morning. She cut herself with a fabric cutter (don't let that woman get NEAR a knife :banghead: ) and has to get the stitches out. So, before going, I figured I should first go check the hog trap, jumped on Booger (my KLR650) and rode back there. Well, I ain't goin' to Columbus, were three hogs in the trap, some of the ones that were on my camera, pix posted in the "They're Back" thread. They were in there this morning and I had a batch of OTHER hogs in there last night. The hogs are invading the place, it seems. I'll get a pic of 'em in the trap to post later, but I'm drinking my morning coffee now and going to set up to skin and quarter 3 pigs. Have to go out there with the tractor to shoot 'em and haul 'em back to the house. These look under 100 lbs, but decent size, not piglets, more like teenagers. They should be tasty. :D I need the pork. I'm out and only have a little venison left from last season.

Congrats on the porkers. From the game camera photos those hogs look fat too.

Two boar and a sow. Boar were 75 and 50 lbs, the sow about 40. They should be tasty. They're on ice now.

These are the first up here at my new place, but I've eaten a ton of wild pork. Just gotta cook it. BUT, you really don't want 'em up there for the crop and pasture destruction they do. Don't really bother me, but the farmers and ranchers hate 'em.

Just doin' my part to help out the farmers. :D

I know what you mean, I would not wish them on any one, but it sure would be fun to hunt/trap them. Not to mention the addition to the freezer they would make.

Two down, got one more on ice I'll butcher in a while after I rest and sharpen knives. I even have a pork roast on the smoker. :D

I haven't started grinding, yet. Probably wait until tomorrow. I have some new pork sausage seasoning I bought that I wanna try out.

Smoked a ham night before last. Some of it'll be stew. Some of it'll be sausage. Loins, the wife has recipes or I can just slice and pan fry. Hams do well in the crock pot, too. These ones are young and very lean, not much fat on 'em, but the smoked ham was good, anyway. :D

I like to cook hams in the crock pot over night with water and a little apple vinegar and coke. Next day pulled pork sandwiches for everyone!

Ha! Don't know, but I know where the station is. :D There's a full time polka station, think it's over in Shiner, not sure, but it is always on at the Kolache shop in Hallettsville. :D I'm almost inspired to start practicing my accordion again. :D Oh, and Hallettsville has a Kolache festival this month. Yum.....

To stay on topic, you can do some great stuff in the Crock Pot with pork. Set it and forget it.

My Mother's side of the family is from Hallettsville, and when I go down there either I am listening to Polka Party Hour, which actually lasts like three hours, or I put it on AM and just let it scan. Great music and I am glad that the Czechs, Poles, and Germans in Texas are keeping it alive.
