Is there any way that the average user (myself in particular) can pick certain forums (Roundtable/Legal) to not show up when I pick the "View New Posts" button. I don't think it's something that should be gotten rid of, I just don't want to have to wade through tons of threads for those two topics just so I can find the stuff I'm interested in.

I don't believe that excluding certain forums is an option.
