Quick questions, does Colt's custom shop number their work in any specific way? For example, a 1911 with a S/N beginning or ending with CS?

No they don't use special serial numbers unless the customer pays for a special number.
Some commemorative models have serials that include letters related to the event being commemorated.

The "CS" 1911's are just part of a normal serial sequence.

Colt Custom Shop guns can be difficult to ID unless you have the original box or a factory letter.
Many Custom Shop guns have Custom Shop fancy grips with CS medallions, but grips are easy to switch.
Without the box or letter, there's often no way to ID a CS gun or a gun that's been worked over post-factory.

I have an older Combat Commander that was done by Colts Custom Gun Shop. On the box lid there is a large gold sticker with their name and logo on it. Other than though there is no other distinguishing marks that would tell you who did the work on the gun. I did get a factory letter which also included the serial number range for the special run that my gun was a part of.
