Looking for a day pack recomendation.

I have been wanting a new backpack to organize my daily stuff, and for hunting and day trips and hikes.
I am looking for something that will fit a small folder for 5.5*11 paper, has plenty of pockets for organizing, a hip belt. Did I mention plenty of pockets for organizing?

I don't want it uber tactical looking, but molle on the outside is o.k.

Got recomendations, please let me hear them. Or if you have some brands that are good but not widely know please list them.

I am really taken with the Maxpedition Sabercat Versipack. Can be worn as an over the shoulder pack or as a large fanny pack. Seems to meet many of the specs the OP had.
