just google 1911 long slides and read the sights that pop up.

Not complete, but Caspian sells 6" long slides with a variety of options.

You'd have to put the internals and sights in.

If you really want a 7" slide you'll probably have to either but a real AMT or have one custom made.

do they make anything longer than 7" or would that cause problems? I know a lot of people would think its dumb but I love the idea of a sort of 'buntline' 1911 I know LAR Grizzly had some 10" slide 1911s

Drop fusion firearms a line. They do alot of 6" 1911's and sell the parts. He might also be willing to work with you on a long barrel slide.
