Our spring season opened up last Sat. I had the opportunity to go south of the Ocala national forest and try my hand at Osceolas this week. Tried to seal the deal on a monster of a bird that must have weighed 20 lbs with spurs that looked like sinker nails and a beard that looked like a paint brush, but no joy. I guess he didn't get that big and old by being stupid. At one point I had 7 hens in the pasture in front of me, one was feeding 10 feet from me. In the end, I got this jake. Gun is a Mossberg 930 with Remington nitro 3" #4's. Next eastern I go for here is going to be with my crossbow.

You will have to wait about a month for mine. Our season opens mid-April and I usually don't get on the best farm until the last weekend. I have hunted it for 4 seasons and have taken 4 birds. Yes, Grasshopper, it is that good.

Have you not had fried Turkey nuggets with honey mustard dipping sauce?
...or smoked wild Turkey breast?
...or pan fried Turkey liver?
...or buffalo turkey wings and thighs?

You will have to teach me how to cook the legs and thighs. Mine turn out like rubber. Fried breast ranks at the top in my book though. Those nuggets and baked beans look fantastic.
 
Deep fried Panko crusted strips with breast meat, fall off the bone leg/thigh meat barbacoa and wing bone calls from last season's kills. Gotta wait until May 8th for my shot at a few gobblers this season ;( 20190101_181722.jpg

Started hunting birds back in the early 70's and got pretty serious with them in the 90's. Hunted 21 out of 28 days in two states in 93. That is about as close to divorce that I have been so far. Mastered most of the different types of calls except the wingbone. Still can't use one. My hat is off to anyone who can.
 
Ok, I had read that smoked eggs were good. Mrs farmer has chickens, so we always have plenty of eggs. We tried them, that's what you see on the grill. They were ok...barely. (the dog got the last two).
The bacon wrapped "pig shots" were a big hit! Bacon wrapped around a slice of smoked sausage, then topped with cream cheese and a jalapeno slice. And a sprinkle of bbq rub.
Google 'pig shots'.
The smoked wild Turkey breast was the star though....as soon as the thermometer hit 160, we wrapped it in foil and rested it for 30 min.
