I am interested in Israeli guns.

So, I'd be looking for a צ (Tadzei) in a circle, which is an Army Proofmark, like on the K-98s? To answer the questions being asked: They're being advertised as being former Jerusalem Police Issue, not צהייל. The price is $270-$300 vs $240 for a standard Spanish one.

What marks would I look for that would prove that the Star I'm looking at is former Israeli issue?

It is double action. It's impossible to know what it started it's life as, but I've read that almost all of the single actions were arsenal converted to double action. I recently picked up this 1914 manufactured arsenal refurbished Tula Nagant. It has matching numbers on the frame, trigger guard, cylinder, and wooden grips. $230 with transfer fees and tax. How'd I do? Link to album: http://imgur.com/a/e1bXj

I go to Garland Public shooting range fairly regularly, but I'm looking for a range that allows the use of FMJ rifle ammunition. Pricing and contact info for the ranges are appreciated.

Both of my rifles are 91/30s. A 1938 and a 1942. They are better than I am. I've managed one inch groups at 100 yards multiple times with both of 'em. These rifles are worth every penny.

Cut my teeth on autoloaders with a Browning Buckmark. Imho you can't go wrong with that one.
