You're hearing the leather rubbing against either your firearm or the hardware attached to the leather panel. Try a bit of parafin wax everywhere metal meets leather. Lightly rub it on, DO NOT melt it in.
The most likely culperate is the belt. The belt mentioned is reinforced with a polymer strip to prevent rollover, but this usually offers only minor resitance to slouching. My 5.11 belt is built the same way and full-framed guns were uncomfortable. Changing to a well made all leather gun belt...

Seriously though, Pete, Sam is right on the money. You can test this out yourself by doing a one handed chambering/clearing drill on your belt/holster (with an empty gun or dummy rounds PLEASE)...
For a plastic holster, that setup can work, but the single point mount will be unstable in a leather holster (and eventually in the plastic variety as well). If you like that style and want it in leather, in an OWB design you would want to go with something similar to what sharpsdressedman...
