NC Turkey Season

Why is Thanksgiving in November, but yet the NC turkey season is in April.
That’s a long time to have to wait to eat a turkey in the ice box!
Oh I forgot, it’s under government control! Sorry!
 
Funny....I'm simmering 4 thighs from this spring's double as I type this. When it falls off the bone I'll shred it up and cook down with spices and herbs, i.e. barbacoa/pulled pork'ish. Making room in the freezer for deer season..... Applied for next year's Turkey permit! Love this time of year!!!

Spring
  • April 6 - May 6, 2018, statewide, except in the Southeast Region
  • April 23 - May 6, 2018, in the Southeast Region only

Fall
  • Archery: Oct. 1, 2018 - Jan. 15, 2019
  • Gun: Nov. 3 - Nov. 16, 2018.

It is very lean but tender enough to pull apart and shred with a fork. After that it simmers low and slow with stewed tomatoes, peppers and onions from the garden. As well as chili powder, smoked paprika, bay leaf, s&p, garlic etc. The shredded meat soaks up the juice and melts in your mouth :) We serve it over rice, on buns or with tortillas. It's even better the next day!

How is it fried like a turkey? I do a 20-25 pounder every thanksgiving for the clan. 25 pounder just will fit in cooker and only then if you truss it up with hay baler twine!
Got me hungry just thinking about it!
 
NC wildlife does an excellent job. What many my age and younger don’t remember (because we weren’t around) is in the sixties we were fresh out of deer turkey and darn close on black bears. Their work now has us mostly well stocked on all of those things. Some times I find the seasons and limits inconvenient, but then I realize that hunting regs are only inconvenient because there’s something to hunt that warrants a rule and I stop sulking and become thankful.

I agree! Back in the 1950s you were darned lucky to find a white tail buck in eastern NC. Does were totally off limits! Now you can’t drive at night without bumping into one!!!
I think our limit now is up to 8 per season!

Love deep fried Wild Turkey! I remove the wings, legs and thighs taking care to leave the skin intact on the breast. Inject the breast with my marinade brine and let it sit in fridge overnight before deep frying it.

The legs, thighs and wings all get the barbacoa/pulled pork slow cooked treatment.
 
At my age my idea of turkey hunting is stick the 34” 12 gauge 3 1/2 out the front door and go pick him up! That or my single barrel 10 gauge! My house is my blind:rofl:
My problem is they only show in fall when no season.:(
 
Yep! Like all the deer that look in the windows of my hunting cabin in summer time... come opening day they get scarce @

After looking at yours, mine appears to be a youngun!
Mine has a beard so it’s a Tom- correct? Im more into Tyson’s turkeys! wild turkeys have only been more plentiful in my later years. Never saw one as a boy growing up.

LOL the Tyson's variety can get pretty big too. Though the supermarket frowns upon us sneaking up on them in full camo! And I can't seem to get them to respond to any of my calls... ;)
