I was just going to post this question. I have maybe 4 hand forged pieces. 2 From Fuad Accawi and 2 hand forged by the Shaolin monastery (I kid you not, I had personal correspondence with them through the ordering and making process.

The rest of my knives are stock removal. I have to say, the forged ones do not get used while the stock removal varieties do.
 
I wasn't about forge knives when I started - I was already disabled enough to not even consider it. Forging seems like fun though. Stock removal and especially with Paul Bos heat treat was a good combination for me.
 
Great article, I particularly like the information on the benefits of hot rolling steel for grain orientation and toughness. As a hobbyist knifemaker who likes to forge knives, I built a rolling mill about 15 years ago. It was the best thing I ever did. The mill saves me a lot of time and is a real-life saver when it comes to reducing steel to knife blank thickness or putting the distal taper in. If you get too much curve in the belly of a knife, one light pass through the mill will straighten out the curve in three seconds.
