Coronavirus/quarantine boredom led me to start a cooking show

I GUESS this would go here. If not, or if it breaks a rule, then I’ll understand its removal.
Anyway, I am bored and all my activities require travel or being away from home/school (which is what home has become now) too long. I had to either go crazy or get creative so I started a YouTube cooking show. I’m editing the second episode now. The first is up. Enjoy, or don’t, but I thought I’d share.

Ive been digging to the bottom of the freezer lately to start eating up the old stuff, just had some wild Pipi (beef) last 2 days.....

Im typing and watching....and "heres my face....but i dont wanna hold it too close to the grill....it kinda hurts"

I about freaking died.....ive lost far too many facial hairs...like eyeborows to grills......

I liked the wild game, home theme, delivery and pace. Awesome job and enjoyable to watch.

One small thing, try grilling the meat with wood/charcoal.
I do use the smoke box from time to time. Not crazy often, though. I have a charcoal burning grill as well, but gas is so much easier.
 
Charcoal or wood will never be as fast as gas, but can be pretty quick to get going. Worth it at the end of your not in a rush. I always start with charcoal even if I am using wood, a cheap propane torch works very good getting the coals going. Never use lighter fluid! use Clump charcoal

I like using the offset smoker at my dads, cook under 250° just short of internal temp wanted. I have a grate I can put just over the coals, moving the coals around and get some air in and they you can sear very quick.

I like gas for grilling. I only cook over wood if im camping, or really bloody hungry while fishing. But yeah i agree, break out ye olde webber, fire up some charcoal! smokes always fun on video.
 
I don’t really know much about crock pots. I’m not against them, but I don’t use them often. 16 years ago we got one as a wedding gift. It’s been used once. Not by us.
It’s worth learning, but may have to wait until after the season when I have ribs. I’ve heard good things about ribs done that way.

Well, I grew up with McDonald's, and I've eaten gas-grilled steaks. Just me, and I know it can't be "just me", but I prefer mesquite charcoal. Yeah, I agree that gas is easier... we don't always have time to burn down a bed of coals, nor do we always feel like it. Either way is a lot better than McDonald's which I consider a misapplication of beef... assuming they're still using beef.
 
Oh, and the part about gamey tasting meat... while mishandled meat can have something to do with it... very important to handle a carcass correctly... a deer's diet, heavy on acorns, can also effect flavor. Marinating in buttermilk overnight takes care of the latter. I've seen it. Not knocking the olive oil and steak sauce marinade, though... just haven't tried it yet.

I recall a guy saying do be picky about who processes your deer. A processor who turns everybody's deer into burger... no, you don't know who shot it and how it was handled. Know your processor, or know how to process your deer.

I've never had any gamey set meat and I've eaten some old bucks. I believe you are right on prep of the meat, causing the "gamey" flavors. I'll take meat right out of the freezer, defrost and cook and don't get any off tastes. The always better to marinade any meat.

I usually just soak in Italian salad dressing, mostly because i always have some around. Really any marinade works out good. I like making hamburger with deer, and about 10% beef fat. Lots of uses for ground meat.

I can't trust any meat processors, we had a guy when I was a kid that did a great job but retired, only $40 and only 20 years ago. I see my friends send deer in and come back with half a shopping bag full and $150 bill.

There diet can change the meat flavor, even quicker then I'd thought. 2 years ago the farms planted soy beans for the first time. That fall the deer tasted noticeably different, I like the change. This last year they did not plate any, either to much rain or soy prices were down. I did see a bunch of fields they just could not harvest.
 
My last small roast I made i made up a quick rub. Like a rib rub, rubbed on olive oil and health amount of rub. In the fridge for about a day and a half. Smoked it at about 225° for 2 hours if I remember right. Used clump charcoal with a few chips of Apple every half hour or so. Got the coals hot and sat the grate on top to sear very hot but quick.

Came out very good, still a little pink inside. Mild smoke ring, even my step mother liked it and she does not like venison.

Courthreene any plans for other game of fish?

A good video would be showing how pineapple can take tuff cute and make them fork tender. You don't taste the pineapple after cooked. Take a hole pineapple, only cut the outside off, you can leave the harder bits. Chop up and used a blender to make a slurry. Fill a zip lock or container with the pineapple, add meat and put in the fridge for no more then one hour. Rinse off and season.

For some reason canned pineapple does not work.
