I dont think they are Chinese, I think they are Reindeer Herders, Siberians, Most likely Nanents, but possibly Evenki or ChukChi.
Except for liver flukes, which are in very noticeable 'Blisters' in the liver, nothing on a Caribou (Reindeer) can hurt you if eaten raw.
The black n white on the chopping board, at the far left is Bowhead Whale muktuk, traded from further north, the 'black meats' on the plate are 1/2 dried seal, the brown meats on the plate are cooked Caribou and diced raw Caribou, with shredded dried whitefish.
The carrots, apples/oranges/bananas, coffee and slurpee come from our villages only store. While local vegetables, roots and greens are great, they are few and mostly sour in flavor, sweet roots like local "Masu' are much like carrots except in color, and carrots are very popular because you can buy 20lbs in one go with no digging, LOL!!
Bubba Gump would be impressed to see the menu of things that can be made to eat from a Caribou.
They are using the 1/2 carcass as a plate and are eating the organs, the first meal from any catch/kill/butcher. Later, after rigurmortis has relaxed in the muscles, they will enjoy the "meats" as we call them. Different tastes in different parts of the animal, if you dont use salt.
The blood pooled in the carcass will congeal and be used to thicken soups or as dog feed.
Aside, If you should ever gut shoot a deer, laving the liver for last will fill the cavity with blood to wash the inner cavity and then let congeal, after just a few minutes, and then slide the mass out with any feed/crap that was in there. Great and simple way to clean a gut shot good.
