Don't know how much of a coffee addict you are, but it's the one that won't be lost in this household.
As to the acid, Have you tried roasting your own from Green beans?
I've been turning them in a Whirley pop stovetop-popcorn popper for 4 years now, takes about 15-20 minutes every 1-2 weeks depending on how large of a batch I do versus Household use (3 heavy adult drinkers)
I've managed to find a few (it's all seasonal) that I can jump between that generally are very smooth on the guts. I can even manage some of them straight Black without killing myself.
We go through about 16 lbs every 6-8 weeks here, averages $6/7 a lb (including shipping) + the intangible bonus of enjoying your own hard work in the morning. there are a few companies but we get through "Sweet Marias"
The down side is the LARGE volume of smoke it produces in your kitchen. Up side is at least if you have to drink scorched coffee, you are doing it to teach yourself a lesson because you screwed it up yourself
Honestly, it's really just too easy, and used to be commonplace before vaccum-sealed cans of pre-ground Coffee.
Keep a pitcher cold on hand now, it's better than another hit of corn syrup, will get you those guns faster.
