I believe I have found a workshop I need to attend!

 
I would probably walk away and order a 2K knife grinder. Not necessarily a bad thing. I made a knife once with a 4" x 18" Craftsman grinder decades ago and it turned out pretty nice. I truly enjoyed making it. Your thread got me to looking at making knives again.
 
Can be very fun and get one hooked on the craft. Had a tons of fun with one of the local forger's gear. The next Devin Thomas, Mike Norris, Chad Nichols...may be waiting within you for that creative outlet. :)

Yesterday was the day. Here's how it started. One of the little black bars between the hammers on the left would eventually become something that looked vaguely like a knife.

The instructor told me that the magic formula is: Heat. Beat. Repeat.

Eventually, after much heating, beating and repeating, I came away with something that looks a little like a knife.
