Can electronic ears fail to cut out for a loud noise, continuing to amplify a gunshot sound?

No. Even if the cut-out circuit failed and directed the headset to reproduce a gunshot, you would suffer no harm. The speaker inside and amplifying circuit driving it simply does not have enough oomph to get loud enough to damage your ears.
