Fat Boar Hog Down

I hunted all last week and didn't see a deer just a young fat (150+ lb.?) boar hog and a young 120 lb. bear just kicked loose from its momma.

The bear was off limits due to the antis and the cowardly FWC but the hog was fair game.

The rut should kick in before the next full moon especially with temps in the high 30s this morning.
 
Not enough fat on these Fla. hogs for bacon. This one was fatter than the majority that I see. He didn't stink and barely had the start of cutters.
I'd rather get him than a deer anyway.
Have you tried soaking in ice water and vinegar for 24 hours? It pulls the gamey flavor and tenderizes the meat.

I have let several hogs lay for the buzzards because they just weren't worth the effort to drag them out. I would never do that with a deer. The hogs down here are thin with little or no fat. They are not barnyard escapees but the descendants of DeSoto's hogs from the 1500s.

Around me. They used to run free range hogs. Now they live off river bottoms and ranchers feed.
 
When I bought a place in Florida in 04 I went looking for a flats boat. Near Myaka City a fellow had one for sale, stored on a “mini estate “. I went to view it, didn’t buy it but the fellow, a masonry contractor, had several dog kennels on the property that held American Bull dogs. Near by a hog pen held several smallesh hogs. Said he used the dogs to run down and capture the hogs. One hog he pointed out as being fattened for thanksgiving dinner.

I took him at his word, knowing absolutely nothing about bull dogs or hogs.
The boat a , nice 22 footer, had a hole in the hull near the center line. perhaps his story was like the boat. ;)
 
Side note on boar hogs. Pork patties, pre-cooked with or with out soy additives. The kind most found at food pantries. USDA regs, no BOAR meat, sows only. What’s up with that. Boar, male pigs or in this case wild pigs???

Personally I'd rather eat a wild pig than a deer anyway. Deer really have little fat. You can always grind a lean hog into sausage or smoked summer sausage adding fat.
