If you could have only 2 knives?

First thing that comes to mind is how the heck am I ever going to have a family dinner. If you mean for myself, I would take a butter and a steak ...... I know, I know; take my trusty griptilian and a larger fixed blade Morakniv Kansbol. Its just that only two is kind of harsh.
 
A Demko edc, even in the AUS10A guise is a joy to carry and use. The locking mechanism is fantastic. One-handed opening and closing is simple with a little practice. That and my High Road 10-year anni knife for field dressing a white tail or an axis, and I'm good.

Perhaps we're looking at this backwards. We've been trying to be inclusive about what a knife is, while we should be restrictive. That way we leave all our axes and multitools out of consideration leaving them available as not knives.

Let's say axes and multitools, machetes, and your kitchen knives are safe. Unless you use a hunting knife for a kitchen knife, or a butcher knife for a general purpose field knife.
 
I could certainly make do with a good drop point fixed blade and an old USA made Old Timer stockman, however lately I'm getting a lot of more use out of my SAK, Opinel, and Spyderco
Sadly, my Buck Folding Hunter and Presidio seldom leave the drawer
 
The old timer 34ot is a fine little knife. I carried one close to 10 years. I still have it, but it's just a touch small for me.

The jumbo case stockman fits my hand better. I think I'd like the large stockman best but ain't had a chance to try one.

I might get. A large old timer. They sure look like the right size. I just rather have something other than plastic scales.
 
Two knives? Yeah right! My collection of sharp edged items is too big to settle for two. And the little collection I have doesn't even compare to what others here have!
 
Some sort of 4-5” dropped point fixed blade and a Spyderco Para2. Maybe a Fallkniven F1 or Entrek Javalina.

If I had to pick two it would be my Strongarm as a field knife and my Benchmade 710 for a general purpose pocket knife.

Multitools apparently don't count so I'd also have my Gerber Multitool

Yeah you might get a few sideye looks buttering your toast with a Kabar fighting knife.
 
Having given this considerable thought, as this is an incredibly strict requirment, my two would be a 10" chef's knife and a USN Mk1. Paring veggies with a chef's knife is possible, just cumbersome, as would be boning fowl or fish.

Seems a wicked sort of Perdition to be denied my multi-tools, the several Gentleman's Companions and, of course, all my Bokers . . .
