Just did a quick tally, of 155 responses there were 16 mentions of revolvers. Quite a few more than I thought given the nature of the question. Just shows there are still a few thoughtful souls among us.

Springfield Armory XDs. It is the lightest and smallest .45 out there save a few really exotic ones. This has been my daily carry gun from the day the guys in Geneseo made it publicly available. It replace a heavier and thicker Glock 36. The Glock replaced a Detonics and the Detonics replaced a custom Armand Swenson custom Colt Commander, which replaced several worn out Colt Commander LWs.

Along the way I've also owned a S&W 4516, a BDA .45 (now a Sig 220) and a Glock 30. I still own the Glock 30 which would be my favorite gun, but it is too thick and too heavy to conceal with skinny jeans and T shirts.

If you could have just one pistol chambered in 45 ACP, which would you choose?

Do not overthink this. You have the rest of your collection and can buy other guns. Whatever the situation is, you can have just one pistol in 45 ACP. That means you could build a P320 in 45 with various slides and grip modules, trade with friends, or sell it off and buy another.

Assume that the limit is not legal, but for some sort of personal reason such as being a diehard 357 Magnum fan keeping a little bit of sin on the side in secret.

If money was no object, a Wilson, Ed Brown, or Nighthawk would be my choice. If I had to carry everyday, probably Glock or Springfield.

You said "pistol" but you also said not to over-think it, so I'm going with my S&W 625. 5" barrel, adjustable sights & the glorious moon clip reloading.

I'd probably have the trigger done up properly. Mine looks just like this one, but without the internal lock.

As it is, I only have two 45s now; the other's a Springer XD-45 Tactical. I really like it, but it won't feed semi-wadcutters, and the Smith will feed ANYTHING.

I have a 7.5" Ruger Redhawk in 44 Mag, and I realized I enjoy shooting it most with lighter loads. May as well just shoot the 625 at that point. Factory 45s kick just about right in my 625.

<TANGENT ALERT>

There's all kinds of 1911s here, but I must say they look a lot more elegant with the flush-fitting 7 round mags.

I can accept other modern adaptations, like a better extractor and sights, but the mag wells and extended mags just wreck the elegant original look of them.
