I find the ambidextrous safety levers makes racking much easier.
If the "racking handles" is what you're after, you can get a much better gun, like Beretta Px4. Or, throw a racker backplate onto a Glock.
 
If racking is a big concern, and she wants to stay with 9mm take a look at the springfield XDE. According to springfield, it requires 27% less effort to rack the slide than the XDS.
 
The S&W 380 EZ is the easiest centerfire pistol I have ever racked. They had one at the gun range shop and I was very impressed with how well it was designed for people who might have trouble racking slides and might not enjoy recoil.
 
IMO the S&W shield 9 is an ideal CC pistol. I use Glocks for everything else, and I prefer the shield to the G43 or G19.
 
So my wife found a pistol she likes. Springfield XDS 9mm with 4 inch barrel. 3.3 inch was a little hard for her to work the slide. Then Springfield, in their infinite wisdom, stopped making it. The one she handled, and the last one at a local shop, sold before we got back there. The very next day. I know my google-fu is weak, but I'm not finding any showing up for sale online, either.

With this pistol as a baseline, throw more options at me so I can have my wife check them out. She is beginning to show interest again after a few years not shooting. In fact, she sold her last pistol quite a while ago. I want her to get shooting while the interest is there. Hopefully, she'll stick with it this time.

Remembering that her dislike of the 3.3 inch was based on working the slide, what can be found similar in feel to the now discontinued 4" XDS?

Not single stack but Slovak GP with rotating barrel seemed easy to rack. The finish was nicer than Glock, S&W,.....quality gun. Standard model in used condition can be found for not much more than $300. Compact model is like G26 perhaps little larger.
 
Handled a Shield and couldn't rack it to save my life. I own a Walther PPS and Glocks which are a breeze to rack and handle. Would highly recommend one of those.

Me too. I’m looking at getting a second. But it’s not really what you would call a soft shooter. I have never offered to let my wife shoot it because I know she would hate it. It is just the opposite of a sweet shooter like a single stack Sig Sauer P series 9mm.

The Ruger P series? Just curious. I have a 45acp and a 40 in the Ruger P series. I'll probably end up with a 9mm too, as soon as I find one that's as insanely cheap as the other two were.
 
I'll probably get a bunch of boos for a suggestion I'm going to make but here goes anyway. The Walther CCP is a very nice pistol. I love the way mine feels in my hand and I shoot it quite well considering my limitation, thank you. I have 1911s in both full size and compact. Despite the trigger quality of the Walther compared to the 1911s I shoot groups about half the size of the 1911s with it. As to slides: The full sized 1911 is pretty easy, the compact is stout to say the least, and the Walther is the easiest of the bunch. I'm definately a fan of 1911s and shoot my 45 cal. ones MUCH better than any of the 9's including the Walther so I'm ruling out the "you just can't shoot a 1911" thing. I'm still playing around with 9mm loads trying to achieve something close to what I manage with the 45 cal. ones and I'm going to keep riding that horse.

Walther CCs fiddly take down? Not a problem anymore. Walther has just made the pistol tool less take down. I wish they had done it originally but since they didn't I'm stuck with my early one. It's not actually that hard anyway.

All this said, if the lady wants a 1911 that's what you should get her. After all she's the one going to be shooting it so make her happy. It will bring about nice benefits for you.
 
Ahh... I have one of those in 40. I got it so recently I haven't even shot it yet. I'm hoping next weekend I'll give it a try. The trigger sure does feel nice.
 
I've become found of the Ruger EC9s. It's compact and handles well for my needs.
