Depending on the type of hunting you plan on doing with your Encore, I would suggest either 1x5 or 2x7 variables. These should be more than enough scope on your gun without being so big as to make the gun "less handy". For simplicity the standard 4 power would be good also. I have used the same 2x7 Leupold on my .30-06 for over 25 years now and been very satisfied with it's performance. I prefer Leupold brand scopes myself.
That said, my new Omega came mounted with a 3x9 Nikon Pro Staff model on it (package deal from the gun shop). While I would prefer a smaller scope, it seems to be a good one, with a clear, bright picture. Time will tell.
