What do you think is "enough" for mags and how do you store them?

Minimum of three per handgun. I have never worn out a magazine, nor broken a spring. Three seems more than adequate for any serious use, and range use. For a rifle, maybe 5-6. I'm not sure why I would need more. The fact that the OP has so many in bags in a bin suggests they don't see use. This feels a bit like the hoarding instinct at work. I get it, and have some of the same impulses, but rationally I don't see the need for 30 magazines. I would never wear out enough mags to need that number in my lifetime. If this is for hypothetical SHTF use, well . . . I try not to get sucked in by that.
My mags are all used. And the collection of mags you're seeing is over thirty years of acquiring them over time.

I've worn out mags, their followers, and springs.

For a competition gun, I'd have a dozen or so. For a EDC, 3 or 4 mags are just fine. If I had to do it all over again, I wouldn't have wasted the hundreds I spent on spear mags that will never be use, and that will be sitting stored in it's original packaging until the day I resell them or die. I no longer see the point in hoarding dozens of magazines especially when I only carry 3 at most at a time. If I ever do wear out a magazine, which I never have, I'll simply replace the spring and/or follower if required.
I've wrecked AR mags just through training. Dropping mags on concrete does that.

If we are invalid by land from a military force our military and L.E. could not handle, alien invasion, or a high round could competition shooter who's hard on their mags would be be reason to "require" more, but I agree that mags that aren't being abused will last.

Putside of that, if there is an AWB, mags will be outright banned or legal to have but illegal to have in the gun. That's how it's been playing out in reality. Those who are law-abiding gun owners who are hoarding a bunch of mags most likely are doing do in vain. I guess it's a "better to have it and not need it" feel good insurance plan.
A number gun owners aren't complying from what I've seen in place like Connecticut and elsewhere.

10+ for every gun that accepts them.. unfortunately some of my guns their mags are vaporwear. So I get what I can when I can

Some look at it that you should have enough for the proverbial SHTF, Mad Max style, some want extras in case bans come down and mags/parts become unobtanium like during the AWB, and there are those who are stocking up to resell for large amounts when they DO become unobtanium, as we also saw back then. I remember a beat up aluminum GI 30 round AR mag being sold for $100.
Me, I just want enough to keep my guns running, and if they break or fall apart, I have other guns that don't use detachable mags.

Probably enough spare parts to repair each magazine several times over. Least these days most magazines seem to be at least serviceable.

Yea, I get that. It would make sense to have several extras in that case. I personally train/pratice with my carry mags, so I avoid dropping them.

Yes, but many are risking up to a year of incarceration or felony counts depending on the circumstances and the state. I'm not sure if it's a count per magazine or not. I think they know a lot of people won't comply, and they're more than happy to play wack-a-mole and make public examples of those they catch.

Have eighteen 1911 mags, mostly seven round, and four 1911s. Think I need two more to make an even five per unit.
Wife's Sig P238 has two, one short, one extended. Could use another extended mag for my pinky....
That's it for sidearms.
Rifles are all Mosins. Have one can of ammo in clips. Does that count?

Like GEM, I live in a "ban state" so I can't say what I might or might not have, in terms of caliber, type, or quantities.
This shows how old I'm getting as I just remembered there ARE 2 pistols I can talk about and their magazines. Both are older guns and magazines for them are as scarce as hen's teeth. As a result, both are limited to only 2 magazines each.
The older gun is a Colt Junior in .25 ACP and the other is an Astra Constable in .380. The Junior was NIB when I "inherited" it and, for such a small, under-powered round with a short barrel, it was surprisingly accurate. I have been told that it would have been considered a "Saturday Night Special" and banned under the GCA of 1968 so it is older than that. The Astra was the first CF handgun I had ever purchased and that was in 1975.

AND, before one of you "eagle-eyed" posters comment on the Astra (bottom pic) that is an OLD picture and the extractor has been replaced about a year ago. ;)
