What is the most recent knife you bought?

I was looking at one of those Zhen Damascus chef's knives -- for only a hundred bucks, VG-10 steel and really nice lines. How does the handle feel?

These are the three she uses most (she had used a host of Chicago Cutlery, Wusthof, and others before these as seen on the previous pictures…). She likes the Rhineland and the Zhen Santuko, but prefers the Zhen Nakiri over both...my guess that goes to both weight and handle ‘feel’. I am guessing she would pick the Zhen before the Rhineland…

Rust Collector... thanks for the link to the article on japanese kitchen knives... Saw one I really liked then wondered where to find it... As usual E-Bay to the rescue - and with a price including shipping that matched the article's listed price... The very inexpensive Kai Wasabi chef's knife.... Of course if I make the purchase one of the knives in my counter block is going to get displaced...
 
Long ago I acquired a Kai Wasabi yanagiba slicing knife for a ridiculous price, and was impressed with what the single bevel blade could do. I don't make sushi or sashimi, but once in awhile I will make jerky or beef milanesa and this knife makes it easy. Kai doesn't market these knives aggressively, because they are made to sell at a much lower price than the flashy Shun products.
 
At that price point, I find the Wasabi line to be an excellent value for the money - adequate steel, good heat treating and good construction. If one does not expect wonders from those knives, they will serve him well.

As a medium-carbon stainless, the Wasabi Daido 1K6 is equivalent to AUS 6 and with a polypropylene handle it is highly rust resistant and inexpensive to produce. I'm not sure how Kai heat treats it and expect it is not pushed to max hardness considering how kitchen knives are abused in homes. My Becker kitchen knives were inexpensive with injection molded handles and they're my daily users.

Nick (Ginger Beard) Piatt designed this VG10 G10 linerlock and B'yond EDC made it. I've known Nick since 2018 when he was just dreaming about making knives. Now I have this GEO first off his design table. I'd be impressed at $100, but I'm floored at $64 from BHQ. It came sharp, centered, and with good fit and finish. The front flipper looked awfully stylized, but ive come to like how it carries the lines of the knife and is so easy to use. So far I've just carried it yesterday and today, but I like it very much so far.

He has a design coming out with Fox and another with Artisan soon not counting a second with B'yond.

“Detent” and lock are run by magnets rather than springs or tension.

3” blade and 2.5” cutting edge.

The odd looking cutout on the handle has a lever that when pushed down deploys the blade. It can also be middle or thumb flicked open.

This design makes a distinct “ting” when deployed.

Kershaw really knocked this Launch version out of the water, what a screaming value. Sadly I will never own one, my state disallows auto knives, and our current political situation is looking more like Medicare for All and less like Constitutional Carry for the foreseeable future, so that's not going to change any time soon.
 
Sure would like to see that Kershaw sitting on a light background so I could actually see the outlines of the handle on it. Black handle on a black background makes it tough...
