Are there any benefits or problems with storing carbon steel hand guns in zip lock storage bags?

The problem is that any moisture on or in the gun can't evaporate, so rust becomes more of a problem. The same applies if excessive lubricant has been used - it's got nowhere to go, so it's likely to migrate to wood grips and soak into them, to their long-term detriment.

However, if the gun is clean and dry, without excessive lubricant, and is stored in a climate-controlled environment where humidity doesn't matter, I don't see a downside to this.
 
I agree. Sounds like a workable idea for long term storage. However, like Preacherman said, if the tiniest amount of moisture is on the gun when it is locked away, it could cause more problems than leaving it in the open air. So perhaps a small packet of dessicant in each bag would do the trick.
 
Yes a pack of desiccant and a piece of vapor inhibiting paper in the bag would be the best way.
 
In my personal experience ziploc bags are risky business. Any moisture trapped in the bag will lead to rust as I sadly found out the hard way. When a dessicant does its job it attracts moisture. Putting a dessicant in a ziploc bag tends to exacerbate the problem of accumulated moisture.

Storing the gun in a clean dry place is absolutely necessary as a first step to avoid moisture and the rust that it can cause. Over the years I have had good sucess with storing my guns (moderately lubricated) in old socks. Protects the surface quite well and, for long term storeage, does a very good job. Of course, you have to have a clean and dry place to begin with. The socks have worked well for me. Good shooting;)
