I agree, Weaver mounts are good to go. They have been around for many years and have stood the test of time. Been using them since the early sixties. I do like the Burris rings however, more than the Weaver.
Mauser Build
You picked a great cartridge to build on and a great action also. The Turk/Swede is a good option or you can go with a standard LR 98 and pick up a 6.5x55 barrel from Midway or Brownells.

VZ-24 Chambering
Reading you comments about having issues chambering a round made me think about this....
You may or may not know this . but Mausers were designed to feed rounds from the magazine, i.e., load the magazine, then cycle the bolt to pick up a round (controlled round feeding)...
Hot water and soap will remove all the corrosive salts and powder fouling. These rifles have a history of firing that old corrosive ammo and it you want to really clean it, you need to get all the corrosive crud out.
Than you can use Sweets or any of the other copper cleaners.
I always start off with a pot of boiling hot water with a touch of dishwashing detergent. Prop your rifle muzzle down, bolt removed and with a small funnel, start pouring the soapy solution down the bore until the barrel is HOT. You are outside....right?
Run a patch with bore cleaner and see...
Fishing sinkers of the egg shape make very good slugs for this purpose. Choose one slightly larger than your bore then grease/lube your barrel and egg fishing sinker liberally.
I use hardwood dowels as close to the bore diameter as possible. If you have space, I do like flgolfer29 recommends...
Lothar Walther makes, in my opinion and experience, very good quality barrels, especially if you are looking to restore a milsurp with a stepped barrel.
I have a 7x57 and a .308 and cannot complain about either. They shoot much better that I can hold.
