Different jewelry stores handle their own security in different ways. I don't want to say a whole lot more about it than that, but one of the last places on earth I personally would draw a gun in the middle of an armed robbery is a jewelry store (or pawn shop) where the folks who own/run the place didn't know me quite well.
In the highly unlikely event the armed robbers commenced shooting people at random, I'd take my chances with that too however.
