I have the A3 with the Vltor receiver and factory 1.5x "donut of death" scope (rail mounted, not integral). The trigger pull as received wasn't bad and improved considerably with the addition of a Neu-Trigger.

Can't help you with the holster, but I add to the chorus saying the Sig Pro is just a terrific pistol. It's my favorite double stack SIG apart from the X-Five, and a fraction of the price.

The captive anti-rotation "control pin" on the bolt carrier is pretty neat and seems simpler than the removable sleeve on the AUG bolt that does the same thing.
As pretty much everyone here has said , the SIG Pro series is just about the best value there is in a traditional DA/SA pistol. Very nice trigger pull, very shootable. Just don't tell anybody else ;)
I had exactly the same experience. My 2010-2014 production 1991, Defender and Mustang have better fit and finish than my mid-70s Mark IV Government Model. The new Colts are nicely built and fairly priced.
