Look on hodgdon's site, they have load data. Could try Hornady's site too, not sure how accessible their load data is though.

Old fridge? Make a rack to hang quarters. Set temp to match temps when you normally age the meat.
We butcher our deer as well, though we really don't age it. But we skin and quarter, then toss everything into an old fridge in the garage overnight to cool it before we process it.

My dad and grandpa's weren't much into hunting. I came by it on my own when I got older.
So, I'd pick Steve Rinella. I agree with his hunting philosophy, and enjoy his show and writing.
If you are just retrieving a downed animal, and can prove it, I think the owner should be compelled (via game warden if necessary) to allow you to retrieve said animal, or face a ticket for "Interfering with hunting" or "Wanton waste" (especially if they don't havest it).
