Personally, I like the 7.62x39 in an AK, and if I feel the need to shoot a smaller boolit, I'd use an AK in 5.56x45 (an Arsenal, Valmet, etc.)

Just my personal experience, of course, but when working with new shooters it seems much easier to get them to keep a rifle pointed in the right direction, than a handgun (I am more worried about their chances to hurt themselves or friendlies, and less worried about their ability to hurt bad...

I'd look at: A milled receiver Arsenal AK SBR (The quality on my Arsenal milled receiver is amazing) (And/or) A Robinson XCR-L in 7.62x39 SBR (I have one with a 10-inch barrel and it's awesome!). Also available in 7.62x51 in the XCR-M, analogous to the SCAR-17... A Sig P220 in 10mm A Sig MPX...

Only place I recall seeing them recently was Gunbroker - for outrageous prices - even worse than mags for the 5.56 M76. Way back, I saw them at Sarco, Numrich, and maybe even RTGparts Edited to add: last time a 20-round mag sold, it was for $60. A 30-round mag sold for (whoa) $415(!)

To answer the question you posed directly: get AR's. The versatility of a modern semi-auto rifle is too great to ignore.
