I live in the state of utah so I could use a rifle or shotgun for hunting elk . I would like to know which round is would be better for killing an elk at around 100 yards. my options would be a 30 06 , or a 3" sabot slug out of my 12gauge with a rifled barrel. thank you

I would use the .30-06. It will probably have better penetration on a big-boned animal like an elk. In fact, I would say to use a rifle over a shotgun always unless you are limited to shotgun only.

You'll probably be more accurate with the 30-06. It's a great round, didn't earn the nickname "the venerable '06" for no reason.
