I’ve actually used those loads in my .257Roberts, but find the lower published max more accurate. Your loads in older Winchester brass are quite safe. They would be less than a +P loading. Understand that newer lot#s of H4831 are a tad bit “hotter” than the older stuff. Also th here is a disparity in how Roberts chamber throats are cut. Rugers had the shortest, Remington a tad longer, Winchester’s have the so-called 3” chambers. This too lowers pressures. Likewise a boat tail bullet further lowers pressures.
BTW; Hodgdons data is for non +P loads.
For the .30/06 AI, there is no SAAMI published pressure specs so you are good on that, too.
If you want to try a really devastating deer load in the Roberts, use 45.0gr of IMR4831 under a Berger 115gr VLD Hunting bullet. Seat to 2.950”. My 22” ER Shaw bbl gets 2,950fps. Drops deer like lightning. Out of a dozen, none have taken a step. Even heart lung hits. My Ruger M77Mk2 got 3,000fps @ 2.810”. Sold it though.
My custom M98 with ER Shaw barrel really likes the 100gr Hornady over 49.0 H4831 for 3,000fps. I once shot a .550” 5-shot group with it at 200yds. Never repeated though... I’m still working through some MidwayUSA blems I bought 12yrs or so ago for $4/100. Most have gone towards burning out the barrel of my Vanguard.257wby. 3,650fps with RL25...
