Being a lefty, I am always looking for a good SA gun with at least ambi safety levers. I have acquired a few (CZ85and HP w/SFS) but am always looking.

The problem I am having is that I always see great deals on pre-owned or surplus guns without ambi safeties. Example ... I saw an Inglis HP for $350 with two 15rd mags this weekend. I see used CZ 75 Compacts (everbody must be upgrading to P01) for $350.

I know that it is realtively simple for a smith to add ambi safety lever to a 1911 style pistol, but what about to the wonder nines?

It totally depends on parts availability.

The first "wonder 9", the Browning High Power, has ambi safeties available from Cylinder & Slide, and Brownell's.

Most newer guns have ambi's available from the factory as options.

However, if you have something like a Walther P-38 or an earlier model of a Berreta, SIG, or other gun, you're usually out of luck, unless the gun can be gunsmithed to accept a later model's ambi.
Sometimes, this is nothing more than a simple installation job.

Sometimes, an ambi is available, but not where you might think.
An example is the CZ 75 series.
Safeties from the European American Arms (EAA) "clones" can be fitted to most of CZ's guns, including the CZ-97B.
