There's a coupla theories as to why they work. The point is they do work. Whether they compress the shot column, retard the wad, both or neither is not important.
Longer tapers seem to deform less shot, thus keeping more pellets in the pattern. Oft the longer taper does the same amount of tightening the pattern without as much constriction needed.
Going from most open, the degrees are something like Cylinder, Skeet, Improved Cylinder, Light Modified, Modified, Improved Modified,, Light Full, Full, Extra Full, etc.
In a 12 gauge, the increments to that list run 0, 5,10,15,20,25,30,35,40 Points Of Constriction and so on.
Makers oft have their own ideas of what constriction is best for a given choke. Briley uses 4 POC between tubes.
All one needs is an open choke for shots up to say, 25 yards, something in the middle for shots out to 40 yards, and something tight for the long ones.
The classic IC, Mod and Full sets do work, but IC's a bit tight for skeet and something in between Light Mod and Mod works better for 16 yard trap for many of us.
