Coyotes and Crows - kill?

i have a buddy who has become somewhat of a mountain man, and he eats coyote all the time. he figures that beef costs money, but in our state he can hunt as many coyotes as he wants. his exterior walls are covered in drying pelts, which he sells (coyote fur is often used for the collars of bomber jackets). he hunts them with an old Remington in .22 Hornet, and insists that they must be taken with clean head shots to avoid spoiling the meat.

i once helped him clean a coyote, and he gave very specific instructions. they must be cleaned very carefully, avoiding rupture of any organs, particularly the stomach or intestines. he cleaned them with the surgical precision of an old hunter who has been hunting 'yotes for decades. he removes the hams, and boils the rest of the meat off the bones for dog food (ironic, no?).

he says he boils the hams until they fall apart, and then uses them in place of shredded beef.
