Making/modifying a low ambi 1911 safety

I have not been able to find a commercially available low safety in ambi, so I assume I need to pay to have it made. (which is actually better so I can just have just my strong side lowered a little.) What's the common approach to having a part made? I assume any talented smith could cut off a paddle and either reweld or weld on a new one in the desired location, right?

Anyone have a recommendation for a smith to make it? I don't mind it being an "out of town" project, as i can spec the part out and paddle size, shape, height, etc. However, smith in Central Texas would be nice, as I could visit in person and he could do the fitting to my gun as well.
