Knowing that the minimum case length for a .308 is 2.005 inches, I was setting up an RCBS trimmer. My first 2 were overtrimmed to 2.002. Is this safe to use?

The only problem with shorter cases, is that some point you begin to lose neck tension, but neck would have to be really short to make a difference. Now if you have a cartridge like the 357 SIG which doesn't have any neck to start with and you cut it too short, you've lost a lot of tension to hold the bullet from set back.

I trim my cases to 2.000". Easy number to remember.

Trim length becomes a safety issue when the case neck get pinched in the throat. Pressures will climb.

Too short a case neck means virtually nothing unless the case neck can't hold a bullet.

I also trim 308 to 2.000 length. This allows me several firings before it requires trimming again. No problem at all being a bit short, as noted above. Too long, however, is another issue!:uhoh:
