Nice choice. Either of the 2 are getting some reputation for their affordability and accuracy. To adjust the trigger on the Stevens, take the screws loose on the underside of the rifle. You'll need a hex-wrench. Look in your manual for a complete detail on how to adjust it, one way increases pull while the other lightens it. I think you can get it down to around 2.5-3 pound pull.

Also, if the stock isn't right for you, try looking up a Savage stock that will fit it.
 
I would recommend the excellent 7mm08 Stevens over the 243win. With lighter bullets the 7mm08 has all the advantages of the 243 and with heavier loads it'll do everything 308 will. With no need to upgrade later on.
 
I know a guy who bought a Model 200 in the 7-08. He put a nice scope on top, can put 3 bullets through a hole about the size of a dime at 100 yards.
