So far, shimming my 870 stock to give about 1/2"-5/8" more drop at the top of the heel seems to be working for me. My concern is that the receiver is now exerting the recoil forces across a relatively small area at the top of the wrist, equal to the size of the shim stock. I am debating using some Acraglas to 'set' the new stock angle....

Words of wisdom?

I would coat the steel with release agent, and the stock with stretchy plastic wrap, and sandwich the acraglas in between. That way when you want to sell it or leave it to your grandkids you can restore it to original configuration.
