What differences are there with the sights? I know some have "night sights" and some have fully adjustable...is that pretty much all the options for sights?

Sights

Sights are widely varied, but generally fall into three categories.

Fixed - Plain Jane sights. May be solid black, have white dots, or even colored plastic inserts
Adjustable - The rear sight has screws to adjust for windage & elevation.
Night Sights - Generally fixed, but sometimes adjustable. These use a small vial of Tritium, a self luminous mildly radioactive gas, which is built into the sight to illuminate the sight dots.

Sights are generally made from plastic or metal.

Take a look at www.brownells.com to see the confusingly large number of pistol sights available.

Whatever you do, don't try a Sig Sauer. You'll never want another gun....

At my local range/store, they are currently selling Sig P228 CPO (certifed pre-owned) for $520. These are quite possibly the best 9mm gun ever made. I cannot recommend Sig Sauer enough. Don't buy a new economy car, when you can owned a factory guaranteed used Mercedes!

Barrel length...

I know with rifles, a certain amount of barrel is necessary to get the bullet up to its optimal velocity. What about pistols? One obvious choice for different length barrels is the overall size of the handgun, but what about the ballistics for a 9mm?

Oops... missed the price range stated on the first page. I have seen eveidence of German police trade-ins showing up at Gander Mountain for $479 as late as last September.
Anyway, I'd bust the bank and go for a P7. You can still find mint P7 PSPs for $900 or less.

A lot of handguns have been suggested on this thread, I'm going to shoot and handle as many as I can.

Any other handgun you'd suggest that hasn't been already?

I just bought a Ruger P95 9mm for my first handgun. It was cheap, $350 new + tax. From what I read, it is OK for a lot of things, but pretty much everyone says it is very well built. My version, the P95PR15 (similar to P95PR10, 10or15=mag capacity), has a Picatinny rail for mounting lights or laser sights. It also has a decocker and manual safety. Both the manual safety and decocker are on the same mechanism. The safety/decocker and magazine ejection button are ambidextrous. It comes with 3 dot sights.

Yeah... It ain't as grand as those Sigs, but it is a solid and inexpensive pistol. For $500 you could get a laser/light combo and slap on that rail if you're into toys like that.

I did find that some of the guns I thought I would buy turned out to feel terrible in my hand when I held them at gun shops. I didn't handle a single Glock that fit my hand right.

Good luck in your search...
