converting 7 shot to 6 shot?

No need, as far as I know IDPA allows the use of 7- and 8-shot revolvers with the simple distinction that one must only fire 6 of the shots (or only load 6 of the chambers).

It can probably be done, but by the time you add in the new parts and the gunsmith fee I bet it would be cheaper to just buy a new revolver. Cylinders do have to be fitted, they aren't "drop in" and the lockwork would have to be changed or modified as well.

Technically possible, but not economically viable is my opinion.

I had it done by S&W.
Not cheap but I had no use for the 7 shot any more and could not sell or trade it.

If you can sell or trade for a sixshooter, you will come out ahead.

my first thought when reading this thread's title was "unload one of the chambers"

It doesn't seem worth the trouble to me but if you really want to do it I'm sure a good gunsmith or Smith and Wesson could convert it for you.

The last part is correct.

IDPA only allows you to LOAD 6 chambers. This means you have to either index the cylinder upon closing, or go 'click' somewhere along the line.

This is pointless and silly.

I guess they don't think the SO's can count to six ?

Too bad, as a simple rule change would allow more revolver shooters to participate.
