So is the 7.62x51 NATO Round equivalent to a .308 Winchester? If so, then could I put a .308 in a 7.62? I know that you can put a .223 Remington in a 5.56 because the pressure is much lower but can't put a 5.56 in .223 because the barrel and chamber wouldn't be able to withstand such pressure from the bullet. What's the inconvenient truth on that theory?
 
Generally speaking yes, they are interchangeable.

You can run into problems however. I had a .308 bolt action that required lots of force to close the bolt on mil surplus 762 NATO ammo. I believe both the rifle and ammo were in spec but the ammo was towards the long end and the chamber was towards the short end of tolerance.

I had a Browning BLR (lever action rifle) chambered for .308. It would accept and fire 7.62 NATO but extraction was very difficult, I gave up on 7.62 with that rifle.

A SCAR 17 I owned ate anything it was fed.

My Steyr Scout and Kel-Tec RFB eat both rounds, no problem.
