I'm considering picking up one of these great old rifles. The biggest concern that I have is that while I like tried and true classic rifles, I want the latest technology when it comes to the scope that I put on it.

I see that Remington 721s will take the same mounts as 700s generally. But it looks like people have had problems mounting the scope on the mounts because the rifle spaces the mounts too far apart. I find people running into problems, but I can't really figure out whether its a systematic issue with modern scopes and 721s.

In particular, the scope that I want to mount on it is a Leupold VX-3 1.75-6x32mm -- http://www.leupold.com/hunting-shooting/scopes/vx-3-riflescopes/vx-3-1-75-6x32mm/ I want to be able to mount it with conventional low profile leupold rings so that it sits down close to the gun.

It definitely isn't as long as the old style scopes, but I can't tell whether I could mount it with two ring mounts. Also, I'm not sure if a one piece mount for a 700 would work. I'm not crazy about that anyway, as I don't want to add weight (a light scope is one of my goals and I don't want to diminish that with a heavy mount).

Shouldn't be a problem.
Look at the Leupold standard or dual dovetail 2-piece bases with the reversible front base.
